Angela Gargano’s Favorite Chicken Salad Recipe

It’s important to have a go-to meal that meets your nutritional needs — but also tastes great. That’s why I love this chicken salad recipe: it’s so easy to make, refreshing and allows you to hit all your macros. Plus, the spinach and almonds help satisfy your cravings for crunch, while the grapes and cranberries give you a little hint of sweetness. When you’re meal prepping, just be sure to keep the chicken salad separate from the bread until you’re ready to eat — I love toasting my bread too. Feel free to experiment with different seasonings, such as adding a tablespoon of dill to your yogurt mixture. 

Ingredients:

2 cups rotisserie chicken

½ cup diced red onions

½ cup diced apples

½ cup grapes, halved

¼ cup dried cranberries

¼ cup slivered almonds

½ cup plan Greek yogurt

1 tbsp freshly squeezed lemon juice (or more, to taste)

½ tsp garlic powder

kosher salt and freshly ground black pepper

8 slices bread

4 spinach leaves

Directions:

  1. In a large bowl, combine chicken, red onions, apples, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic power, and salt and pepper (to taste).
  2. Serve sandwiches on bread with chicken mixture and spinach.
